It was my little boy’s 1st birthday the other day and that means CAKE! My son has a CMPA (cow’s milk protein allergy) and that means he can’t eat dairy or eggs. Thankfully with the rise of veganism there’s a plethora of easy and simple vegan recipes for cake available, and I actually prefer some vegan cake recipes to the dairy versions (like this amazing vegan chocolate cake recipe here). These vegan cupcakes can also be adapted to make vegan Christmas cakes. I have a great selection of vegan Christmas cake recipes at the bottom of this post!
CMPA is an immune disease which means the immune system goes into overdrive when coming into contact with any kind of dairy and eggs. Medication (or more) is needed to help control the symptoms. It’s not an intolerance or about fussy eating.
It’s a medical condition and can be serious. I just like to get that clear because there seems to be a lot of confusion between an intolerance and allergic reaction, and even the suggestion of these serious medical conditions being down to picky eating.
Luckily, with the uptake in veganism baking cakes and finding dairy-free and egg-free recipes has become much easier. And thank God as life without cake is no life at all!
I found a rather wonderful vegan cake recipe on Jamie Oliver’s website (click here to take you straight to the vegan vanilla cupcakes). These are absolutely beautiful cup cakes. Incredibly moist and soft.
My little boy and everyone else loved them. Plus the cupcakes are really easy to make so good to bake with children too.
Easy Vegan Cupcake Recipe
The dairy-free and egg-free replacements are soya yoghurt, dairy free margarine, and oil are used but I think you’d be hard pushed to tell the difference!
FULL INGREDIENTS FOR VEGAN VANILLA CUPCAKES
- 300 g caster sugar
- 150 ml sunflower oil
- 1 teaspoon vanilla extract
- 500 g dairy-free soya yoghurt
- 2 teaspoons cider vinegar
- 350 g plain flour
- 1 teaspoon bicarbonate of soda
- 1½ teaspoons baking powder
- For the vegan vanilla icing
- 200 g dairy-free soya spread, chilled
- 660 g icing sugar
- ½ teaspoon vanilla extract

Alternatively, you could buy something like these Christmas treats from Bahlsen (not strictly vegan though!). Lidl also do a good version of German Christmas treats which I really recommend! You could even craft them into lovely little Christmas decorations if you don’t have the time to make your own.
