It was my little boy’s 1st birthday the other day and that means CAKE! My son has a CMPA (cow’s milk protein allergy) which means he can’t eat dairy or eggs.
CMPA is an immune disease which means the immune system goes into overdrive and medication (or more) is needed to help control the symptoms. It’s not an intolerance or about fussy eating. It’s a medical condition and can be serious. Sorry, it just bothers me when people get the two confused or think it’s down to fussiness.
Luckily, there’s been a rise in veganism making baking cakes a bit easier for people with allergies to enjoy seriously good cake. What is like without cake? I found a rather wonderful vegan cake recipe on Jamie Oliver’s website (here). These are absolutely beautiful cup cakes. Incredibly moist and soft. My little boy and everyone else loved them.
Soya yoghurt, dairy free margarine, and oil are used instead of milk, eggs and butter. I swear you wouldn’t be able to tell the difference .
Here’s the ingredients
- 300 g caster sugar
- 150 ml sunflower oil
- 1 teaspoon vanilla extract
- 500 g dairy-free soya yoghurt
- 2 teaspoons cider vinegar
- 350 g plain flour
- 1 teaspoon bicarbonate of soda
- 1½ teaspoons baking powder
- For the vegan vanilla icing
- 200 g dairy-free soya spread, chilled
- 660 g icing sugar
- ½ teaspoon vanilla extract
